So what do you do with all the excess roosters. Half you fertile eggs are going to hatch males, and roosters don't like to share hens.
In a perfect world ALL of the eggs are eaten and none are hatched. Most laying hens never get "broody" and want to hatch a clutch of eggs. When one does, you remove her from the eggs and dip her hind end into dishpan full of ice water.
Leave the egg hatching to the experts. Baby chicks are $3 and are already sexed so you don't need to worry about cockerels. Point of lay pullets at 5 months are about $25.
In her lifetime a hen should give you about 500-600 eggs. You don't need any roosters at all, they're a nuisance but they're pretty and the hens like having one around.
